Risotto with vicenza’s style stockfish

INGREDIENTS FOR 4 PEOPLE

1 pack Baccalà alla Vicentina Rossato g. 0,300
g. 280 Vialone Nano rice
1 onion
q.s. vegetable broth
q.s. grated grana cheese
q.s. extra virgin olive oil
q.s. chopped parsley or chives
q.s. salt and white pepper

PREPARATION

Slice finely an onion and wither it in extra-virgin olive oil. Add the rice, toast and add a little at a time the vegetable broth together with the stockfish, until cooked. Stir the risotto with a sprinkling of grated grana cheese. Add a handful of minced parsley or chives and white pepper to taste.
