Zampone
Zampone has ancient origins: the idea was to put the minced meat of the pig in a wrapper formed by the skin of its paws. Cooked for 3-4 hours, it is the classic dish of the New Year’s Eve dinner.
Considered a particularly valuable product, and so consumed during the holidays, accompanied by lentils, as tradition, it is auspicious for the coming year.
